Marriage is a basic civil right that should be attainable by all Americans. For the truth about gay marriage check out our trailer. Produced to educate & defuse the controversy it has a way of opening closed minds & provides some sanity on the issue: www.OUTTAKEonline.com

I'm doing an independent study about this topic. I have already read some of Tufte's stuff. What other authors did you end up reading? I'm just starting my research so any pointers would be greatly appreciated.

Marlo: We use Patak's Biryani Curry. I've only used Indian curries that you can get in jars at the market. I think you could definitely experiment with it. I've never used Thai curry so am not sure.

I have frozen it outside the package before. Just don't wrap it in anything or it will stick to it. It can also be harder to defrost (you'll need to put it in a bowl to be sure to catch all the water running off, etc.) I haven't had problems with the packaging in the microwave.

There is probably a big difference between freeze dried tofu like koya dofu and frozen tofu. I know that koya dofu has to be slowly reconstituted, rinsed out, etc. before use. Let me know if you have any recipes for koya dofu or know where I could get it in Boston.

Thanks, Jason. I appreciate the detailed instructions on the freezing method. I have two follow-up questions.

What do you mean by curry paste? Like we were discussing at lunch, there are many different styles of curry and curry bases. When you specify paste, I think of several Thai varieties.

Do you freeze the tofu in its package and original water? For some reason, I think from conversations with other friends, I expected the tofu would be removed from the package, rinsed, and frozen on its own.

For #2, I can ask a Taiwanese and/or a Chinese friend their/her process to get a better idea of what other people do. I was also concerned about the microwave defrosting method, because I would not use the original packaging in the microwave.

I've had koya dofu once at a temple on Mount Koya. Maybe I can dig a photo up later.

Pans: We actually don't use a saucepan for this but a type of pan that is between a sauce pan and saute pan. I would probably use a saute pan first, then a wok, then a sauce pan depending on what you had.

The pan you have would alter the temperature you are using, etc. The wok might be easiest to handle the spinach but you'd have to be careful about the heat and how fast the liquid reduces.

Frozen tofu has a different texture and taste than unfrozen. It is spongy after you freeze it and has a density that the fresh doesn't. It absorbs a lot of the curry and liquid in a way that fresh wouldn't. I haven't tried fresh in this, but I don't think it would be good at all. The frozen tofu also stays together, I think the fresh would come apart in the cooking.

I guess that frozen tofu like this is similar to Japanese koya-dofu although commercial koya-dofu has to be reconstituted and apparently the reconstitution process can change the flavor. I have a recipe for Japanese freeze-dried tofu with egg (koya-dofu tama-jime) but haven't tried it and haven't tried koya-dofu in this. I usually just stick a block of extra firm tofu in the freezer left in the package.

Buying a pig sounds awesome. You should read the chapter in "It Must've Been Something I Ate," wherein the author and a town full of Frenchmen slaughter a pig and prepare "boudin blanc." It's pretty wonderful. It's made me want to slaughter my own pig, but I'm told they are really mean bastards; killing them is not very easy.

[...] I’m sitting in North Station waiting for my 6:45 train to Newburyport, because half an hour is apparently no longer enough time to get from work (an 8-minute walk to Kendall Square) to South Station; hence I missed the bus north from South Station. I’ve missed a few trains/buses by now because of this. The T is decidedly sucktastic recently, as my friend Jason has noted. [...]
